Handpicked Olives: A Farmer's Touch
Farmers hand pick the olives from the trees

From Tree to Crate: A Sustainable Olive Harvest
These are put in plastic crates as it is more sustainable and allows the olives to breath properly

Pure Process: Handpicked Olives Cold-Pressed Within 3 Hours
They are taken to the mill within 3 hours to be pressed with cold extraction (below 27 ºC)

Excellence in Every Drop: From Hand Harvesting to Expert Quality Testing
We receive samples of the extracted Extra Virgin Olive oil which our sensorial panel in our factory tests the result for best quality

Only 1 in 4 Batches Pass — That’s Our Standard
On average 75% of samples we receive are rejected as they do not meet our strict criteria

Approved samples, are sent to a 3rd party laboratory for analysis which we check against the organoleptic criteria (Floral notes, fruitiness, bitterness and pungency), chemicals, the composition of bisphenols ( polyphenols) and Kapa levels which determines how fresh the Extra virgin olive oil is.

We Only Source What Passes Every Test — Sensory, Scientific, and Ours
If it also passes this analysis, we request the quantity we need.

We Don’t Just Approve. We Re-Approve.
Once the quantity ordered arrives it goes through the same quality process above to ensure it is the same as the sample tested.

We then allow the shipment to enter our climate-controlled silos which we then fill the gap with atmospheric nitrogen, so our Extra virgin olive oil stays fresh and does not loose its quality and therefore health benefits
